Sweet Heat Pepper Spread Toast with Sauteed Spinach, Avocado, Poached Eggs, and Applewood Cheese
INGREDIENTS:

2 slices of thick white bread, toasted

1 tablespoons sweet heat pepper spread

1 cup fresh spinach leaves, washed and dried

2 large eggs
-
1/4 cup shredded applewood cheese
-
Salt and pepper, to taste

Olive oil, for sautéing

INSTRUCTIONS:

Toast the whole grain bread slices until they are golden brown and crispy.​

While the bread is toasting, heat a small amount of olive oil in a skillet over medium heat. Add the fresh spinach leaves and sauté until they are wilted, about 2-3 minutes. Season with salt and pepper to taste.

In a separate pot, bring water to a gentle simmer. Crack each egg into a small bowl or ramekin, then carefully slide them into the simmering water. Poach the eggs for about 3-4 minutes, or until the whites are set but the yolks are still runny.

Spread a generous amount of sweet heat pepper spread on each slice of toasted bread.

Place the sautéed spinach on top of the pepper spread.

Layer the sliced avocado over the spinach.

Carefully remove the poached eggs from the water using a slotted spoon and place one egg on each toast.

Sprinkle the shredded applewood cheese over the poached eggs.

Sweet Heat Pepper Spread Shrimp Stir-Fry
INGREDIENTS:

1 lb (450g) large shrimp, peeled and deveined

2 tablespoons sweet heat pepper spread

2 cloves garlic, minced

1 tablespoon soy sauce
-
1 tablespoon honey
-
1 tablespoon sesame oil
-
1 red bell pepper, sliced
-
1 yellow bell pepper, sliced

1 small onion, sliced
-
1 cup broccoli florets
-
Cooked rice or noodles, for serving

Optional: sesame seeds and chopped green onions for garnish

INSTRUCTIONS:

In a small bowl, mix together the sweet heat pepper spread, minced garlic, soy sauce, honey, and sesame oil. Set aside.​

Heat a large skillet or wok over medium-high heat. Add a drizzle of oil and swirl to coat the pan

Add the sliced onions and cook for 2-3 minutes until they start to soften.

Add the bell peppers and broccoli to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

Push the vegetables to one side of the skillet and add the shrimp to the empty side. Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque.

Pour the sweet heat pepper spread sauce over the shrimp and vegetables in the skillet. Stir everything together until the shrimp and vegetables are evenly coated with the sauce. Cook for an additional minute to heat through.
