Sweet Heat Pepper Spread Toast with Sauteed Spinach, Avocado, Poached Eggs, and Applewood Cheese

  • 2 slices of whole grain bread, toasted

  • 1 tablespoons sweet heat pepper spread

  • 1 cup fresh spinach leaves, washed and dried

  • 2 large eggs

  • 1/4 cup shredded applewood cheese

  • Salt and pepper, to taste

  • Olive oil, for sautéing

  1. Toast the whole grain bread slices until they are golden brown and crispy.

  2. While the bread is toasting, heat a small amount of olive oil in a skillet over medium heat. Add the fresh spinach leaves and sauté until they are wilted, about 2-3 minutes. Season with salt and pepper to taste.

  3. In a separate pot, bring water to a gentle simmer. Crack each egg into a small bowl or ramekin, then carefully slide them into the simmering water. Poach the eggs for about 3-4 minutes, or until the whites are set but the yolks are still runny.

  4. Spread a generous amount of sweet heat pepper spread on each slice of toasted bread.

  5. Place the sautéed spinach on top of the pepper spread.

  6. Layer the sliced avocado over the spinach.

  7. Carefully remove the poached eggs from the water using a slotted spoon and place one egg on each toast.

  8. Sprinkle the shredded applewood cheese over the poached eggs.

  9. Season with additional salt and pepper if desired.

  10. Serve immediately, allowing the warm poached eggs to melt the cheese slightly.
